COOL PROMPTLY

Divide large batches into shallow portions and refrigerate within the safe window stated by trusted food-safety guidance.

LABEL EVERYTHING

Name, production date, freeze date and portion size prevent freezer archaeology six weeks later.

LEAVE HEADSPACE

Liquids expand as they freeze. Use suitable containers and leave the amount of space their maker recommends.

DEFROST SAFELY

The fridge is the default. Faster methods must be suitable for the food and should lead straight into cooking or consumption.

REHEAT PROPERLY

Stir where possible, check the centre and reheat until steaming hot throughout. Avoid repeated cool-and-reheat cycles.

WHEN IN DOUBT

Appearance and smell cannot prove food is safe. If storage history is uncertain, bin it—bravery is not a seasoning.
